When trying to do an upgrade on the PineTab 2, I get "cannot open /usr/share/u-boot-menu/read-config: No such file" when the postrm script zz-u-boot-menu tries to run. This blocks upgrade of the package.

Was u-boot-menu removed at the time? If so, this looks like a duplicate
of https://bugs.debian.org/1061687

Either that, or possibly a u-boot-menu from outside of Debian? (given
that I suspect the kernel you reported is from Mobian, and they have
historically had a patched u-boot-menu as well)
