the git-send-email(1) manpage contains this paragraph:

This isn't very useful because "its documentation" is already what I'm looking at.
I guess a less confusing description would be enough to fix this issue:

  These configuration variables all provide a default for git-send-email(1)
  command-line options.  See OPTIONS for details.
