The dropdown to select the default language only has an unqualified (either 1901 or 1996) “German (Germany)”. I have hunspell-en-gb and myspell-de-de-1901 installed, and when I click the Edit button next to hunspell, I can see that it sees both languages as having spellcheck installed, but the Default Language dropdown only shows one.

Anyways: It just occured to me that you wrote *default* document language. I thin you don't need it, for LibreOffice it's German (Germany), regardless of what dictionary is behind it. https://cgit.freedesktop.org/libreoffice/core/tree/i18npool/source/localedata/data/de_DE.xml So if this dict is found for German (Germany), you should be fine, shouldn't you?
