Consider switching the default from evince to papers. The latest
version of evince has switched to gtk4 but papers has a much more
mature gtk4 implementation. The Papers UI is written in Rust.

Unfortunately, I don't know of a way with metapackages to:
- Change the default app when upgrading
- Allow swapping to the previous app after upgrading.

An upgrade script could do that though.

evince is marked for autoremoval from testing (RC bugs #1127487,
#1127935), so it no longer makes sense as the first alternative of the
Cinnamon stack.

atril is the MATE fork of the GTK3 evince: it matches the traditional
Cinnamon look and, unlike papers, it still ships the PostScript, DVI and
EPS backends, so it covers every document MIME type the Cinnamon session
maps today. It also provides pdf-viewer, djvu-viewer and
postscript-viewer.

papers is kept as an alternative for users who prefer the GNOME stack,
and the pdf-viewer virtual package stays as the generic fallback.
