The SONAME of libOpenEXR changed in sid.

There is an ongoing transition with openexr

https://release.debian.org/transitions/html/auto-openexr.html

The issue you report should be fixed by the 5.4.1-1+b2 version of darktable,
which rebuilds against the new openexr. Feel free to follow up to this
bug if the problem persists.
