No keyboard localisation when choosing "Debian Live with Localisation
Support". For example, choosing "Spanish" at this boot submenu, keyboard
is set to an USA layout (in any X, TTY and pty).

Keyboard layout should do same associations as Debian-Installer suggests
for choosen language.

What are you referring to?

live-config is a generic tool that integrates in the boot sequence, the
boot menu is not under its control and it's definitely not responsible
of the "Debian Live with Localisation Support" thingie that you are
speaking of.

I'm tempted to close this bug right away but maybe it must be reassigned
somewhere so please let us know what live image you did use for your test.

Where did you get it from? If its a custom image, what tool did you use
to build it?

It's something that live-wrapper generates, so it's in the official
Stretch images. Unfortunately, as we can see, it's not complete - it
would need more work in live-config to make it properly functional.

Tested with: debian-live-buster-DI-a1-i386-gnome.iso in a Qemu virtual
machine.
Boot menu option (example):
Debian Live with Localisation Support -> Spanish (es)

Environment variables seem right and make effect over interface words,
but "Input Sources" in desktop environment not: "English (US)" anyway.
Can be seen with: gnome-control-center region

After the Debian live images switched back from live-wrapper to live-build a long time ago, the boot menu changed and the option to select a language has become hidden (again).

The functionality is still present, but not easily accessible.
You have to edit the boot prompt and add the following to the boot command line:

`locales=de_DE.UTF-8 keyboard-layouts=de` for a German setup
`locales=es_AR.UTF-8 keyboard-layouts=latam,es` for a Spanish setup as in Argentina.

So you'll have to specify both language and keyboard layout, there is no automatic deduction of the keyboard layout from the language.
