so you can just build the arch part, without the doc.

I think that it's an step better than profiles.

What you're trying to achive?  Is this somehow not working or
inconvenient for some use case that you have?

If you build aptitude-common, you will build documentation packages too.

Use modified software and reuse as many Debian packages as possible.
