Precisely in the latest versions I moved stuff to Build-Depends-Indep,
so you can just build the arch part, without the doc.

I think that it's an step better than profiles.

What you're trying to achive?  Is this somehow not working or
inconvenient for some use case that you have?

aptitude-common is Architecture: all.
If you build aptitude-common, you will build documentation packages too.

Use modified software and reuse as many Debian packages as possible.
